Healthy Vegetarian Retreat Food

Potato and Leek Bake

3 large potatoes
1 medium leek
Butter
Vegetable stock
Salt and pepper

Slice up the potato and layer in a dish, followed by a layer of sliced leek, then a few dobs of butter and some salt and pepper. Repeat until dish is full. Pour about 2/3 cup of stock over the top. You can add cheese if you wish.

Bake at 180 degrees for about 45 minutes. Then enjoy!
